Summer Salad

This past weekend was perfect for grilling on the patio and trying out a new summer salad creation. The fact that it has been rainy and miserable for the last 3 days encouraged me to post this lovely salad in hopes of having good weather for the next few days – I mean how can one NOT  want to be outside when you look at this?

Strawberry and Feta Salad with Chili Vinaigrette
7-9 large sized strawberries, rinsed and sliced lengthwise (you should get about 5-6 slices per berry)
5 oz block of sheep’s milk feta, cut into bite size pieces
1/4 cup olive oil
1/2 cup brown rice vinegar
1 TBSP grated onion
1 clove grated garlic
1 serrano chili pepper diced

In a glass or ceramic bowl mix together all ingredients except for the berries and feta. Let sit for 2 hours, strain into dressing container.

Arrange strawberries and feta in a pleasant arrangement (I like rows of each on a small bed of mixed greens). Drizzle with dressing just before serving, or bring the dressing to the table and allow each guest to add their own to their salad.

Doesn’t looking at this just remind you that summer is really around the corner? Yum!
